Egg with Tomato (chinese style)

Scrambled eggs with tomatoes, this is one of the most common dishes in home cooking. Its cooking method is simple and easy to learn, and its nutrition is reasonable, which is in line with the taste of the public. It is also often described by people as some kitchen novices who know nothing about tomato scrambled eggs, a very entry-level, simple and fast home-cooked dish.

  • 4 eggs
  • 2 tomatoes
  • salt
  • vegetable oil
  • soy sauce
  • caster sugar
  • chopped green onion

How to make cook eggs with tomatoes:

  1. First, we wash the tomatoes and knock the eggs into a small basin.

  2. Remove the stems of the tomatoes and cut them into small pieces.

  3. Add a teaspoon of salt to the egg mixture, and quickly break up for later use.

  4. Heat oil in a pot and pour in egg mixture.

  5. Gently stir fry with a spatula, let it heat evenly, after the egg liquid is all set, take it out of the pot and set aside.

  6. Heat the wok again, add a little vegetable oil to the wok, and when the oil temperature is about 50% hot, put the chopped tomatoes into the wok.

  7. Add a teaspoon of original brewed soy sauce and a pinch of salt, stir fry evenly.

  8. Add a spoonful of fine granulated sugar for freshness. If you like to eat sweet and sour, you can add more sugar.

  9. When the tomatoes are fried, pour in the scrambled eggs, stir fry quickly, and let the eggs absorb the tomato juice.

  10. Finally, sprinkle with chopped green onion, and a delicious and tender tomato scrambled egg is ready.


  1. When scrambled eggs, the temperature should not be too high. It is easy to fry the eggs to old age. After the egg liquid is all set, it can be out of the pot. After frying for a long time, the old eggs will affect the taste.
  2. When scrambled eggs, you can add a little water to make the eggs extra fluffy and tender during the high-temperature frying process.



Sure, thinly sliced beef, chicken, pork, or diced tofu could work well.


I like using sweet, ripened Roma tomatoes for maximum flavour! But feel free to use what you have on hand and add more sugar to taste if the tomatoes are not sweet enough.
