01 The first method: using dried chili

Ingredients:Dried chili, oil, sesame seeds, garlic, ginger, star anise, cinnamon, peppercorns

Production process:

  1. Put the dried chilies in water to clean the dust on the surface and drain. Then put it in the pot and fry until fragrant.

  2. After frying, you can put it in a mortar or a food processor and smash it. Don't beat it too finely

  3. You need to peel more garlic, and the ginger will also smash them. Then put the crushed peppers in a bowl along with the garlic and ginger. Add some sesame seeds and a little salt, and mix well.

  4. Then, you can pour the rapeseed oil into the pot. The amount of oil needed here is a bit more. During the oil heating process, put in star anise, cinnamon, and some peppercorns.

  5. Turn off the heat when it is fragrant. Take out the star anise, cinnamon, and pepper, and let the oil in the pot cool down slightly. Seeing that the oil temperature is not too high, scoop a spoonful of the cooked rapeseed oil, pour it into the minced pepper, and pour the oil using a spoon. Stir the chili noodles constantly. Spoon another tablespoon of cooking oil onto the chili surface, continually stirring while dipping. Just mix and add oil until the cooking oil is thoroughly mixed into the chili noodles.

  6. Then, put it in a glass bottle. The fragrant chili oil is ready.

02 The second method: using chili powder

Ingredients: 200 grams of chili powder, 2 pounds of oil, five fragrant leaves, 3-star anise, two grass fruits, 10 grams of Aoyanqi, 10 grams of high-quality liquor, 50 grams of water, 20 grams of ginger, onion 80 grams, 10 grams of shallots, one coriander. Forty grams of white sesame seeds.

Production process:

  1. Put 200g chili powder into a bowl. Add five fragrant leaves, 3-star anise, two strawberries, 10g Aoyanqi (about one spoon)

  2. Add 10 grams of high-quality white wine (about two bottle caps) and 50 grams of water, then stir well.

  3. Pour the prepared rapeseed oil into the pot, and heat 80% hot. Turn off the fire with a lot of green smoke.

  4. 20 grams of old ginger, washed and sliced. Eighty grams of onion (about half) are also cut. Knot 10 grams of shallots and one coriander. Forty grams of white sesame seeds. The oil temperature drops to 50% hot, and pour in the freshly chopped ginger slices, onions, shallots, and coriander. Fry on medium heat for 10 minutes.

  5. Then take it out. The oil temperature is 180 degrees. Pour two tablespoons of oil for the first time, and add color. The oil temperature is 200 degrees. Pour two tablespoons of oil for the second time, and add fragrance. The oil temperature is 220 degrees. Pour 40 grams of sesame seeds and stir fry. Let stand for 5 seconds and turn off the heat. Pour oil for the third time, and force the fragrance.

  6. Then, stir it evenly until the house's fragrance is full. After cooling, mix it in a clean glass bottle with noodles, stir-fry vegetables, and a spoonful of cold dishes. It is very delicious. The color is also fantastic.
