Wash the blanched keels with warm water. In addition, set up a casserole and boil a pot of boiling water, and pour the water into the cleaned keels. Add a piece of washed and diced old ginger.

We will prepare the lotus root when it is simmered on medium and high heat. Buy this kind of original, unwashed lotus root, the skin will have black pockmarks, but it doesn't matter.
Peel and clean the lotus root.
