This dish is made of the pig's long neck bone, which belongs to the movable joint part of the pig, so the meat is very tender. The long neck bone is stewed with lotus root. The soup is tender and the lotus root powder is glutinous. It is very suitable for a winter dish.

  1. Choose the keel of a healthy big pig, and tell the butcher to cut it into large thick slices horizontally, which is convenient for eating. Take it home and wash it off with running warm water.

  2. Boil a large pot of boiling water, put the keels into the water, and there is no blood red visible to the naked eye. Take them out. No need to scum, it's all going to be poured out anyway.

  3. Wash the blanched keels with warm water. In addition, set up a casserole and boil a pot of boiling water, and pour the water into the cleaned keels. Add a piece of washed and diced old ginger.

  4. After the water is boiled, cook on medium-high heat until it boils, and continue to keep on medium-high fire.

  5. We will prepare the lotus root when it is simmered on medium and high heat. Buy this kind of original, unwashed lotus root, the skin will have black pockmarks, but it doesn't matter.

  6. Peel and clean the lotus root.

If you do not have stainless steel props, you can use a porcelain knife, or wrap the lotus root with a piece of clean gauze, and smash the lotus root with the back of the knife. A stainless steel pot can also be used without a casserole.
