Chong Qing Chicken

  • 2 chicken legs
  • 1 potato
  • 1 pepper
  • Flammulina velutipes 1 bunch
  • Rapeseed 150g
  • Hot pot base 80g
  • Bean paste 20g
  • 6 dried chilies
  • peppercorns
  • 6 slices of ginger
  • 8 cloves of garlic
  • dack soy sauce
  • White sugar


  1. Put garlic, ginger slices and dried chili into the oil pan and sauté until fragrant. Put in the chopped chicken thighs, fry until the muscle chicken turns white, add 1/3 bag of hot pot base (I use a slightly spicy base) and bean paste, and continue to stir fry for 3 minutes.

  2. When frying chicken nuggets, add a small amount of white sugar to enhance freshness. Once the casserole is hot, transfer the chicken to the casserole and continue cooking. At this time, you can put the potato slices into the pot to cook.

  3. Cover and cook on medium heat for 20 minutes

  4. Add small rapeseed and enoki mushrooms to the pot. Or you can add your favorite vegetables and cook for another 5 minutes.

Cooking Tips:

  1. There is no need to blanch the chicken before marinating, otherwise, it will not be easy to taste.
  2. Doubanjiang is spicy, and the quantity is determined according to personal taste.
  3. Put a little vinegar to make the meat more tender, just add a little less.
  4. After the chicken is finished, you can put the remaining soup in the wok into the casserole, add your favorite vegetables, and cook it.


How to tell if it is cooked?

Regarding the standard of cooking, the surface of the chicken oil will emit bright chicken oil juice and the skin will swell and plump. A pound of chicken will be cooked in about 7-10 minutes. If it is not cooked, you can continue to simmer, and be careful not to stick to the pan.

How to remove the fishy smell?

When burning, use beer instead of water to remove the fishy smell, and it will be dissipated during the heating process, and there will be no heavy alcohol smell.
