Okra pie recipe


  • high-gluten flour
  • low-gluten flour
  • butter
  • salt
  • milk
  • egg
  • ham slices
  • cheddar cheese
  • black pepper
  • okra


  1. Mix high flour with low flour and salt.
  2. Use a shaving knife to scrape the butter out of the freezer. (Be sure to scrape with frozen butter in this step, so that it can be better mixed with the flour, so that the pie crust will be crispy).
  3. Cut the butter crumbs and the mixed flour into fine sand.
  4. Add refrigerated milk and knead with hands until the surface is smooth.
  5. Divide the dough into 4 equal parts, flatten it slightly, wrap it with plastic wrap and place in the refrigerator for at least 30 minutes.
  6. Take out the dough, use a rolling pin to roll out the dough to a thickness of about 3mm and a circle slightly larger than the tart pan. Cover the pie and press the edge of the pan with your hands to form, and press lightly with your hands to make the tart shell and tart pan close together. Use a fork to poke holes in the bottom of the pie, put it in a plastic bag and refrigerate for 30 minutes.
  7. Preheat the oven to 200 degrees, press the beans on the pie crust, brush the edges with egg yolks, and bake in the middle and lower layers of the oven until set (25-30 minutes).
  8. Take it out and brush with egg wash while it is still hot. You can also bake it in the oven until dry.
  9. In the process of baking the pie crust, let's make the filling:
    Add milk, eggs, some salt and pepper and mix well. Slice the ham into small pieces, and dice the cheddar cheese. Boil the okra first in boiling water and pick it up (add 2 g baking soda to the water to keep the okra green), dry off the water, and cut into thick slices.
  10. Spread the ham slices in the pie first.
  11. Spread another 2/3 of the cheddar cheese.
  12. Pour in 3/4 of the milk and egg mixture.
  13. Arrange the okra (you can style it as you like), then add the rest of the milk, egg and cheese.
  14. Preheat the oven at 180 degrees, in the middle layer, about 35 minutes, until the egg liquid solidifies and the surface of the pie is golden brown.
  15. Unmold while still hot.


What does okra taste like?

The taste of okra is light and has no special taste. It is suitable for raw food, cold dishes, stir-fries and soups, but it has some mucus, which contains polysaccharides, which can protect the gastric mucosa.

What kind of sauce goes good with Fried Okra?

There are a variety that you can use depending on your flavor preference. Some of my favorites include: ranch dressing, garlic aioli, remoulade, or chipotle mayo. But this is also great on it's own and really doesn't need a dipping sauce.
