From south to north, from east to west, there is a delicacy that has always been a favorite among foodies. Though it may not be expensive, you can find it in street vendors, barbecue shops, stewed meat shops, and snack bars. This ingredient is none other than chicken feet, also known as "phoenix claws" in some places. When it comes to preparation, there are many options such as braised chicken feet, tiger skin chicken feet, cold chicken feet, and steamed chicken feet. In my family, we prefer to simply boil and soak the chicken feet to remove any unwanted odor, and then add a secret seasoning for a simple yet delicious taste.

- 10 chicken feet
- 1 pack of secret seasoning

Rinse the chicken feet thoroughly. It’s best to choose fresh chicken feet, but if using frozen, ensure they are fully thawed before washing.

Add one dried orange peel (or ginger slices), one star anise, and ten peppercorns to a pot of boiling water. Add the cleaned chicken feet and cook for 8 minutes, then transfer them to a bowl of cold water for cleaning. Repeat this process three times.

Once the chicken feet are cold, dry them off and add the secret seasoning. Mix well, ensuring that all chicken feet are fully coated.

Place the chicken feet in a sealed container or bag and refrigerate for at least 4 hours to marinate. For best results, it’s recommended to consume within 3 days.
